what i eat in a week: april 2-8

You guys often ask me what I actually eat in a day or week. And, in truth, what I eat totally varies depending on my schedule + life + craziness. Sometimes I eat three square meals and sometimes I have 6 mini meals. For myself, but also for you, I'm taking this week to share what I eat when. Let me know what you think below! 

sunday // 

6 a.m.: I always wake up early on the weekends and am usually the first to make a cup of coffee. I sit in bed + read with my coffee filling me up. 

7 a.m.: Obviously, I'm onto my second cup of coffee. I tend to do one cup black and one with this creamer

11:20 a.m.: Juice from Mom's for a photoshoot -- I choose the beets juice from Naked Lunch. 

12:30 p.m.: True Food Kitchen for lunch. I split the vegan burrito with Maxim to start + then move onto the Mediterranean Quinoa Salad. It's not vegan, so I order it sans feta + add tofu (sometimes I opt for tempeh or portobello 'shrooms). It's amazing and balances out the burrito in the best way possible. I opt for water instead of a bloody mary. 

2:30 p.m.: I bop around Target to find a new pair of heels for work and pair it with a GIANT iced coffee to help me through that post-lunch daze. 

4:00 p.m.: Maxim and I head to Trader Joe's to stock up since our fridge has been  E M P T Y  after two busy weeks of being on-the-go. 

6:00 p.m.: I cook an easy, breezy pasta dish that'll fuel us for a 6 a.m. Zengo Cycle class. Obvi, there's a wine glass in my hand.   

9:00 p.m.: OOPS. I pour another glass of red wine. It's the Big Little Lies finale, and like, I HAVE to.  

12:00 p.m.: Right before bed, I drink a glass of water. I'm trying so hard to drink more water, so I make it a priority to have one whenever I think about it.

monday // 

5 a.m.: Maxim and I decided to start off the week in the best way we know how: 6 a.m. spin class with our FAVE instructor, Shaynna of Zengo Cycle. We're both groggy, and drink some warm lemon water to get our bodies moving. 

6: a.m.ZENGO! Lots of water, obvs. 

8 a.m.: On my way to the office, I nosh on a delish, packed yogurt bowl: KiteHill yogurt chilled overnight with chia seeds. On top, I added a ripe banana, a HEAPING scoop of coconut peanut butter + granola + blueberries. It's probably the best post-workout breakfast on the planet. 

10 a.m.: I grab another cup of coffee + a sparkling water. I add THIS powder to it,  and I swear to go it's a liquid Xanax. Whenever I know I'm going into a stressful day, I'll make sure to have a cup of this. 

1:30 p.m.: Lunch today is a {not-so-sad} desk lunch of leftover Sweetgreen mixed with some fresh spinach, cucumbers + hummus. 

7:30 p.m.: I'm in the office until 7 p.m. and am SO exhausted. I think about just ordering in or grabbing a side of guacamole and chips, but I opt to cook. I make an easy, breezy batch of veggies tacos. I served them in corn tortillas for Maxim + salad style for me. Personally, we skip the lettuce and add farmer's market spinach for a healthy dose of dark greens. 

9:00 p.m.: I fall asleep  E A R L Y  while answering emails. 

tuesday // 

4 a.m.: I'm up early answering emails and doing work (it's busy right now at the office). I pour my first cup of coffee and quickly make two or three more before the sun rises. 

7 a.m.: I get ready for the office while sipping on some lemon water to offset the ridiculous amount of caffeine in my body.

8 a.m.: At the office, I'm literally NOT hungry at all, so I make some of my happy tea (aka peppermint tea with THIS powder). But around 10 a.m., I start feeling hungry and nosh on my favorite yogurt concoction of KiteHill unsweetened yogurt with chia seeds, granola, coconut pb, bananas + blueberries. 

12 p.m.: I'm doing social media for a live event, watching via livestream, creating graphics, etc. I have a cup of coffee, but I can't leave my desk until it's okay — and I'm REALLY hungry. I pull out my FAVE "lifesaving" snack, Amazi plantain chips (go for the chili ones!). I nosh a handful and feel the hanger slipping away. 

1:30 p.m.: I brought lunch from home + eat at my desk (ugh). It's a simple salad of farmer's market tuscan kale, cucumbers, celery, goddess dressing, and chopped tofu. 

3:00 p.m.: I make myself a BIG cup of hot water and lemon. It would be cold water, but I'm freezing at the office...so yeah. The IT game also came to set up a standing desk for me and I'm irrationally excited to have an excuse to stand up all day. 

6:00 p.m.: It's free cone day and Maxim and I are DYING to get ourselves a little treat. So before he gets home, I go for a couple mile run since outside is crazy windy. I stretch and do some abs and call it a day. BUT THE LINE FOR BEN & JERRY'S IS SO LONG. Feeling determined, we walk to the food store instead and buy pints of ice cream. 

8:00 p.m.: I make taco bowls again with our leftovers from last night. I pile mine HIGH with mushrooms + hummus...and okay, it was more of a smorgasbowl, but I loved it. We share rose and, obviously, dig into some ice cream after. 

wednesday // 

8 a.m.: Maxim makes Swapples for both of us — and we top them with our favorite: hummus and cayenne pepper. Per usual, we both eat bites before heading out the door + finishing them on our way to work. 

9 a.m.: It's the first day of my happy time of the month, so I skip the coffee and instead opt for a Kevita + gallllllons of water. 

10:30 a.m.: Other half of the swapple

12 p.m.: Water + powder — I sip on it and then head to the gym for a quick lunchtime workout. 

2 p.m.: Brought-from-home salad: farmer's market spinach, avocado, leftover pasta, mushrooms, frozen peas, olive oil, cayenne pepper, 

3:30 p.m.: I keep a big jar of chocolate espresso beans on my jar and grab a big handful out. 

7:45 p.m.: I'm feeling a tiny bit dizzy post-Botox and I DEFINITELY don't feel like cooking. I grab leftovers out of the fridge. It's leftover homemade pasta sauce, veggie sausage, cayenne pepper + fresh veggies. 

9 p.m.: I have a meeting with a brand via FaceTime + I apologize that I just got Botox, but the camera is a little fuzzy, so they can't tell. Thank goodness. I sip on peppermint tea to help with digestion + wash my face before hitting the sack. 

thursday // 

8:20 a.m.: I live wicked close to my apartment, but I almost always find myself eating AT the office. I don't know why, but I think it's because I know I'm wayyyyy more productive in the morning, so I always just want to get INTO it before the afternoon hits...at which point my productivity falls OFF A CLIFF. Anyways, I eat an EXTRA ripe chopped banana with chia seeds + coconut pb + yogurt. 

1:30 p.m.: I order from Sweetgreen. I get the Spicy Sabzi bowl with extra cucumbers and no broccoli. I eat half and save the rest for tomorrow. 

3:30 p.m.: I leave the office to get down to D.C. for a fashion event, sipping water the whole way downtown. 

7 p.m.: After hair and makeup, my hairstylist gives me a HUGE shot of tequila to calm my nerves — it was probably a triple shot, but whatever. I downed that sucker like a champ. 

9 p.m.: It's post-show, I'm back in my normal clothes + S T A R V I N G , which meant there was only one solution: Vegan 'zah from &pizza. With extra vegan cheese, because duh. 

10:30 p.m.: We saved our pizza until we got home and DIG IN. We share leftover rosé and talk about the night — and I forget to take off my makeup. One day I'll get good at that, and I'll have flawless skin. 

friday // 

8:00 a.m.: I ate super late last night, so I forgo breakfast + indulge in an almond latte instead — I get mine with an extra shot to wake me up. 

11 a.m.: I grab a few of my chocolate espresso beans + nosh while finishing up reports on this lazy Friday. 

1 p.m.: My lunch is leftover Sweetgreen from yesterday with extra peas + black beans. 

2 p.m.: I make myself a BIG cup of water with the best chill powder on the planet. Seriously, you guys, this stuff is LIFE-CHANGING. 

7 p.m. I'm listening to S-Town for a SECOND TIME while sipping on red wine and cooking. I make a BIG batch of vegan fried rice with lots of cayenne pepper and lemon and spice. It's filled  with wayyyy more veggies than rice, just the way I like it. One the side, I make a panang curry-like sauce to drizzle on top. 

9 p.m. We cheers to the end of another week and being twentysomethings and being together. When I say I'm marrying my best friend, it's so true. We spend the rest of the night doing face masks, eating air-popped popcorn, drinking wine, concocting theories on S-Town and plotting our eventual move to L.A...
